Why not:

1. Build a tank full of water ("space").

2. Build a ship sim inside this tank full of water.

3. ???

4. Profit!

Twisted Evil hack the vanilla texture pack downloaded with every game, and make lava invisible.

You do know that Minecraft replaces transparence on textures with black automatically?

It should be noted here that some of the training American astronauts go through (or at least used to go through) involved null-g simulations in a giant tank of water. They submerged a full-scale replica of either a shuttle or part of the ISS, I can't remember which, and the astronauts did some of their space suit training there.

Yeah, they use water tanks for astronaut training because in water you have buoyancy simulating low gravity.

The problem is that if things go wrong, you can just swim back to the ISS model. Can't do that in space.
